Justification of fermented milk food enrichment with phyto-components for correction of athletes’nutritional status

The article gives credence for improving the ingredients of fermented milk products. “Sesame”
seeds are used as a herbal supplement, which contains useful bioactive substances. In the course of
the research within the framework of the republican project «Optimization of the athlete’s body through
enriched Kazakh national sour-milk dishes, depending on the qualification and type of sport», the herbal
supplement was selected within the dose-ranging study. A 30% herbal supplement product with 3
components, having a sour-milk taste and smell, was developed by us and put into the production of
fermented milk. According to organoleptic properties, this product turned out to be the best. In our
opinion, a high biological value of enriched food has been established, which pointed to high nutritional
ingredient on biochemical and physiological athlete’s body. Thus, the developed functional food
products, based on Kazakh lactic dishes and production process, have a high biological value. They are
a source of valuable food nutrients, essential compounds, microelements and vitamins, which defines
the expediency of all types of products as sports functional nutrition in all kinds, athletic activities and the
athlete’s qualification.
